A STORY THAT DATES BACK TO..

..In 1979 Claudio and Dada Rener decided to leave the frenetic city life to move to the Umbrian countryside, improving their daughters' life quality, in the quietest and most peaceful settings. Dada developed a passion for cooking, a world completely new to her until that moment, she discovered the beauty of creating artworks with the products that nature offers.

Dada Rener has received recognition in Italy as one of the country's top chefs. In 2000 she made her first appearance on the TV show "La prova del Cuoco" the Italian format of "Ready Steady Cook" and went on to became one of Italy's celebrity chefs.

In the last four years she has become part of the Masters of the Kitchen. Now her daughter Masha has taken over the day to day running and development of the restaurant, La Chiusa, in Umbria, while she devotes time to her grandchildren.

"Cooking for me is contact with reality.."

"After many years of city life, I had the chance to return to the simplicity life of the countryside where I could savour the true flavours I had known in my childhood when I spent the summers at my grandparents. I try to work simply with the raw ingredients of food. I'm happy when people say that my food has a different flavour. It's just true flavour."


TECHNIQUES OF COOKING

"When I eat, I like quality. So, for me, it has to be free range and organic."

"The key thing is to devise a method of cooking that seals in the flavours and the taste. After years of constant practice, I think I succeded.
I have called this method
"SIMMERING AND SEALING".
